My husband and I made these yummy apple dumplings today. This is a recipe we have developed ourselves but am happy to share it with all of you.
Pastry Crust:
2 sticks cold butter cut into 1" pieces.
4 cups flour
1 teaspoon salt
1 cup of ice water
Using food processor pulse flour, butter, salt until small balls start to form. Breaking up any large clumps. Then add water all at once and pulse until very soft ball forms. Turn out on plastic wrap and form into soft ball, wrap well in plastic and refridgerate for at least an hour. If your pastry isn't very cold it will be hard to roll.
Apples filling:
10-15 apples depending on size, cored, peeled and cut into thick slices.
1 cup packed brown sugar
2 Tablespoons flour
1 Tablespoon cinnamon
Almond topping:
2/3 cup crumbled toasted almonds (coat almonds with butter and toast in oven aprox. 10-15 min.) Then crust with rolling pin.
2/3 cup brown sugar
2/3 cup flour
5 Tablespoons melted butter
Mix almonds, sugar flour and melted butter, set aside.
Sprinkle sugar, flour and cinnamon on apples and toss until all are well coated.
I used individual tin pans for easy clean up. But you can use whatever you like to bake your dumplings.
Remove dough from fridge and cut into aprox. 8-10 equal pieces. Then flour working area and roll dough so it's large enough for your container. We like ours about 1/4" think. Crimp edges.
Fill each cup with apples.
Then top with almond mixture.
Bake at 350* for about an hour or until pastry is golden and apples are tender. Enjoy!
