Apple Dumplins Gang?

My husband and I made these yummy apple dumplings today. This is a recipe we have developed ourselves but am happy to share it with all of you.

Pastry Crust:
2 sticks cold butter cut into 1" pieces.
4 cups flour
1 teaspoon salt
1 cup of ice water

Using food processor pulse flour, butter, salt until small balls start to form. Breaking up any large clumps. Then add water all at once and pulse until very soft ball forms. Turn out on plastic wrap and form into soft ball, wrap well in plastic and refridgerate for at least an hour. If your pastry isn't very cold it will be hard to roll.

Apples filling:
10-15 apples depending on size, cored, peeled and cut into thick slices.
1 cup packed brown sugar
2 Tablespoons flour
1 Tablespoon cinnamon

Almond topping:
2/3 cup crumbled toasted almonds (coat almonds with butter and toast in oven aprox. 10-15 min.) Then crust with rolling pin.
2/3 cup brown sugar
2/3 cup flour
5 Tablespoons melted butter
Mix almonds, sugar flour and melted butter, set aside.

Sprinkle sugar, flour and cinnamon on apples and toss until all are well coated.

I used individual tin pans for easy clean up. But you can use whatever you like to bake your dumplings.

Remove dough from fridge and cut into aprox. 8-10 equal pieces. Then flour working area and roll dough so it's large enough for your container. We like ours about 1/4" think. Crimp edges.

Fill each cup with apples.

Then top with almond mixture.

Bake at 350* for about an hour or until pastry is golden and apples are tender. Enjoy!

My final WCMD Challenge

I completed all the WCMD challenges at PTI. I hope I win one of those awesome prizes! This challenge was to use inspiration from Austrailia. Nicole's challenge can be found here http://nicholeheady.typepad.com/capture_the_moment/2009/10/wcmd-challenge-4-australia.html. If you have never visited Nicole's blog be sure to check it out. It's filled will all kinds of yummy stuff and today starts the sneak peaks for this months release. I'm counting down with all my PTI friends!

Here is my masked and highlighted card. Very simple. I have yet to master alot of techniques, but it sure is fun trying! I used glimmer mist, chipboard shapes and a PTI button and sentiment.

I've also found a wonderful challenge site called Stampin Sisters In Christ challenge thanks to my cyber friend Peggysue who is new to the DT. Way to go PS. This weeks challenge taken directly from the site:
Psalm 97:1 (one of the verses in the Verve stamp set above) says, "The LORD reigns, let the earth rejoice; let the oceans be glad." I'm sharing several verses with you today, but this is the one I've based this week's challenge on.

Challenge:

My Personal Challenge to each of you is to have an attitude of PRAISE this week!!

My Card Challenge is to show the "earth rejoicing"... flowers blooming, oceans roaring, trees bursting with fruit, mountains and hills 'clapping'... whatever comes to mind for you as long as your card or project shows the earth rejoicing.

New Cricut Cart....

If you haven't see it yet, you gotta take a look at this festive cart!

Card #4 WCMD

My next card take me to India. I googled some Indian art and greeting cards. Oh how I wold love an Indian body art stamp. That henna body painting is amazingly beautiful. The craft is truly an art form in itself.

I found this picture looking at google images and thought why not use it as part of a greeting card. I added some jewels and a sentiment and love how it turned out.

Thanks again for stopping by and Happy WCMD!

Card #3 WCMD
